Looking for a good cucumber salad receipe

All the rain has finally paid off with an abundance of cucumbers in the garden. I have had in restuarants a type of cucumber-onion salad that seemed to be marinated in a sweet vinegar dressing. Does anyone have a receipe for this type of salad. I have found a few on the net , but would like one that some has tried.

I don't have that one, but the one I make is very easy -

slice the cucumbers
toss with some cherry or grape tomatoes
and marinate in a shallow dish in Italian dressing (regular, not creamy)
 
My mom used to make a cucumber onion salad when I was a kid that was very yummy. I don't know exact measurements but I can tell you what she put in the salad.

Cucumber, Onion (thinly sliced), mayo and vinegar whisked together (to make a thin/watery consistency. It should not be thick), mix all together, sprinkle generously with pepper, refrigerate for a few hours, enjoy!

The Minnesota Scandinavian way is to add some sugar to some milk and "spoil" it with vinegar. No measuring, but go light on the vinegar. Salt and Pepper the cukes before adding them to the mixture.
 

cut up cucumbers and onions Boil equal parts of water vinegar and sugar let cool and cover onions and cucumbers. (I have used sweetener in place of sugar but after cooled down)

That's what I do as well, but I usually cut the tomatoes.
 
I like to use a Thai Sweet Cucumber Salad Dressing on thinly sliced cucumbers and red onions. You can usually find it in the ethnic section of the grocery aisle.
 
Here is the recipe that my Ganny taught me...I lost her a week ago today so I am happy to share this with you today.

Slice your cucumbers and onions thin. Layer in a 9x13 dish salting between layers. Cover with saran wrap and let sit in refrigerator for a few hours. (this draws the moisture out and leaves the cucumbers nice and crunchy) Drain in collander and rinse to remove the salt. Pour out onto towel to dry.

Mix together 2 (heaping) tbls. mayo, 2 tbls. of sugar, 4 tbls. of apple cider vinegar. Toss with onions and cucumbers in large bowl. YUMMY...I may need to make some for myself now!
 
DH and #2DS like cucumbers and onions with vinegar and oil and lots of salt and pepper.

#1DS and I like cucumbers and onions with sour cream, salt and pepper.

No measuring. You can always add more of something. We make boh of these alot, all summer long. We put them in tupperware and just shake it every so often.
 
My recipe is similar to Granny's except that I add lots of pepper. No more salt because the cucumbers have enough.
 
I actually know more than 1 way to make it, are you looking for a vinegar type dressing or a creamy mayo based dressing?

Cucumber (we like to use the English seedless cukes) and sweet onion thinly sliced. If you like onion, use alot, if not, just a little.
Stir together: sour cream, sugar, white vinegar. Taste and adjust accordingly
Pour over cucumbers/onions and use plenty of fresh ground black pepper. Mix and chill. :goodvibes

I ahve made two that great grandmas and all the way down made, PA Dutch cooks. a Sweet and sour type.

Thin sliced cukes, onions, then I mix white viniger and sugar, with celery seed or celery salt. Measurements. almost half and half....I tend to put a bit more sugar in and cut the vinegar by a tbls.

for the ones in mayo I just add about a cup of mayo....I think 1/4 C about heafty sugar and 1/4 wht vinegar.

I mix my cole slaw the same way....for potato or mac I add hard boiled egges, the mayo, wht vinegar and sugar. I chop the whites of egg and smush the yokes into the mayo....

I also use to pickle the cukes and can them for the winter, Have not done that in 30 years,
 
Here is my mom's recipe that I make all the time:

Thinly slice 3 cucumbers and soak them in salt water with 3 cloves of garlic until they are limp. Rinse the cucumbers, let them dry off, you can either throw out the garlic now or you can put it in ths salad for more garlic flavor but not to eat. Mix together 3 tablespoons sugar, 3 tablespoons water and 6 tablespoons red wine vinegar. Now add the cucumbers and thinly sliced red onion. My DD won't eat onions so I stopped using them in the salad and don't have an exact amount written down anywhere.
 
mine is similar to many here...

sliced cucumbers in a plastic container, (that has a lid)
then add a pinch of salt, (not much)
about a teaspoon of sugar( you taste will judge how much, you can add more later if you like)
about 1/4-1/2 cup of mayo, depending on how creamy you like or how many cukes used. Lets' say 1/3 cup to 2 larger cucumbers
some oregano
about a tablespoon of red wine vinegar
place lid on container and shake to combine and make the "sauce" for the salad. Let chill for at least a 1/2h hour.

Taste the 'sauce' when done mixing and adjust ingredients to your liking. It's a hard one to mess up and only takes about 5 mins start to finish to make. Have fun!

I make this one too, my grandmother taught me!!! I don't know exact measurements either, but to a pint of sour cream I add maybe 1-2 tbs of White vinegar (have used others, like Red wine or balsalmic,too distracting though the "pink" just doesn't look as appetizing as the white against the green cukesand balsalmic is just too strong of a taste ) and a tsp of sugar, salt and fresh ground pepper. then I adjust to taste from there with a splash more vinegar or more salt/pepper or sugar.
I use my zester (the one that makes thin strips of peel not the micro plane "grater") and "stripe" my cucumber skins before I slice them, it makes it look pretty...
