My own beef and beer (low sodium since the only sodium is what you add yourself
...
Slice 1-2 onions (any kind) and put in crockpot with some minced garlic (4-5 cloves)
Take a low end cut of beef (2.5 - 3lbs or so) and place on top (trim any huge fat parts, but leave some fat for cooking).
Sprinkle with dried or fresh rosemary (as much as you like) and black pepper - here is where you'd also add any salt you like (or any other herbs you like with beef).
Take your oldest beer in the house and pour the whole bottle on top - I tend to use a dark beer, but use one you like...
Cook on low for 6-8 hours, until it is total shred consistency.
Shred and add back to "broth", using a little cornstarch to thicken if necessary. If you have too much fat, skim before you add the beef back.
To serve, you can eat it straight, you can put this over rice, you can serve it on a bun with some cheese, you can add a little BBQ sauce, you can make it into a tortilla wrap, etc...it's all good...
