Does anyone have any experience or tips about using lockers at Magic Kingdom? I just want to leave a bag of clothes for a later dining reservation. TIA!

Thousands use them every day.
(I have done so many times over the years.)
No trick to it.

They are located just inside the park gates, to the far right.
(See #8 on my map, below.)

Renting a Locker
It’s easy to rent a locker while at the parks! If paying with cash (U.S. currency) or a major credit card, you may proceed directly to the self-service kiosk to rent a locker. If paying with a MagicBand or gift card, please visit the merchandise location nearest to the lockers for assistance. There, a Cast Member can process your rental transaction and give you a code to input into the self-service kiosk—providing you access to a locker.

Theme Parks: Lockers and Pricing
The following locker options are offered at the Walt Disney World theme parks:

Small 12" x 10" x 17" $10 per day
Large 15.5" x 13" x 17" $12 per day
Jumbo (Magic Kingdom park and Epcot only) 17" x 22" x 26" $15 per day

very easy to use, you just need a credit card, you create a 4 digit code to lock and unlock them

I have used them many times - they are by the stroller rental in the front of the park. There is a kiosk to purchase and you have unlimited access to it throughout the day. There are 2 sizes and you pay a little more for the larger one but a change of clothes only should fit easily in the small one. If the kiosk is down you will have to go into the stroller counter and ask them to rent by hand. When we stay off site we often bring extra clothes to leave for cooler evenings, dry clothes in case of rain (usually brought a change if it was pouring in the morning so we could get comfortable when it moved out) and before they gave away ice water we would pack it with bottled drinks and snacks.

Great idea! We always carry jackets all day if the morning is cool, don't bring water shoes because we'd be stuck carrying them, etc. I never thought about renting a locker for all of that.

Are there usually plenty of lockers available towards the evening? We’ll be getting to MK one day at around 6:00pm after coming straight from Typhoon Lagoon, and I wanted to store our towels etc.

Yes.
As some guests will have left MK by that time of day.

(But, like absolutely EVERYTHING, this can be affected by the date and overall crowd level at WDW.)

It will be on Wednesday 29th May (11:00pm regular closing, with 11:00pm-1:00am EMH) I’m guessing that a lot of people will still be arriving late on for the evening EMH?

Truly nothing to "worry" about.
I have never not been able to rent a locker on a "normal" day.

I just wanted to state that there are always exceptions due particularly heavy crowd conditions.
