Here's another of my 'stock' receipes. This one is extremely fexible, in that using a number of different things, you can change it's taste without adding calories or fat. Give it a try!
Lite Pizza Tostadas
6 Fat Free Flour Tortillas (7 inch)
3oz ground turkey breast
1 sm. green bell pepper, chopped finely
1/2 tsp. Italian Seasonings
1/4 tsp. (or to taste) crushed red pepper
1C Fat Free Tomato Sauce
1, 4oz. can chopped mushrooms (or use fresh)
1/2 of a small head of lettuce shredded
3/4C Fat Free Mozzarella Cheese, shredded
1 Tomato chopped
Place tortillas on a baking sheet
Bake at 400F until golden & crisp (10mins +/-)
In microwaveable 2 quart dish;
crumble turkey, add green peppers and sprinkle in the Italian Seasoning and the red pepper.
Microwave on high for 5-7 minutes, or until turkey is no longer pink in color - halfway through cooking, add in tomator sauce, mushrooms and finish uncovered.
Divide lettuce among the tortillas. Spoon about 1/2 C of mixture onto each. Sprinkle with chesse and chunked tomato.
Makes 6 Servings
