While there are definitely popular LL attractions that sell out first, they are not always the ones to choose first. Mostly because other attractions may be harder to get later in the day through the refresh trick compared to the most popular.

Magic Kingdom
Peter Pan and Jungle Cruise: Here I would choose Jungle Cruise. Easier to get LL for Peter Pan later. Especially if you get an early return time for the Jungle Cruise
Hollywood Studios
Slinky and Tower of Terror: I still choose Slinky first, but I make sure to choose Tower second as I find Tower to be harder to get once it sells out.
Epcot
Remy, Test Track, and Frozen: I actually choose Frozen first. Two reasons is that Frozen is harder to get when it sells out, and I can get a earlier return time. Making it easier to refresh to a Remy LL after. PLUS if you are entering from International Gateway for EE I make Remy the EE attraction. If attending EE from main entrance, Test Track is the EE attraction. Also note that Test Track is the easiest LL to get of the three via the refresh trick.
Animal Kingdom
Navi River: All AK LL attractions are pretty easy to get, but I choose Navi because I want to try to line up the ILL FOP with the Navi return time. During EE I would try to fit in Dinosaur, Triceratops, Everest, Then beeline to Safari, by opening or at least 30 minutes after park opening. Maybe fit in Rapids after Safari before going over to Navi and FOP.
