Lightened 'Ohana Bread Pudding Recipe

DH and I are nuts about 'Ohana, and I love making their famous Bread Pudding at home between visits. I have devised an amazing lightened version that I promise tastes like the real thing!

Liz's Light 'Ohana Bread Pudding

1 loaf Challah (Jewish egg bread; I get it at Trader Joe's)
1/2 carton Eggbeaters
1 16 oz. can light coconut milk
1 cup skim milk
1/2 tsp. salt
1 cup Splenda (or sugar)
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/2 cup crushed canned pineapple
1/4 cup sweetened shredded coconut

Bananas Foster Sauce:
1 cup light brown sugar
1/2 cup light corn syrup
1/2 cup Promise spread
1/2 cup fat free half and half
1 tsp. vanilla extract
3 bananas

Heat oven to 350 F. In large bowl, whisk eggs, milks, salt, sugar, cinnamon and nutmeg. Cut bread into 1 inch cubes, add to egg mixture. Let stand for 10 minutes. Pour into baking pan that has been sprayed with nonstick cooking spray. Bake 1 hour, 10 minutes or until slightly golden on top.

In sauce pan, combine all sauce ingredients except bananas. Bring to a rolling boil and continue to boil at medium heat for 10 minutes, stirring constantly to prevent burning. Peal and slice bananas and add them to the caramel sauce.

Serve sauce over bread pudding with a scoop of fat-free vanilla ice cream.

Thanks for the lightened version...we just had the real think Sunday night but will try this one once we are home to help get us through until the next trip down in December.
