You're correct that you can't but the great news is that they offer drawing classes in the Art of Animation front lobby 3 times a day! They are free and open to both children and adults. My DD have done this on our last 2 trips and really enjoyed ourselves....even when my Donald Duck looked like he was eating a bone rather than it being his bill!

Definitely try to find DeVine at Animal Kingdom. Mesmerizing!

At Epcot, check out the Pixar short film festival. I hear very little mentioned about it and we loved it!

If you are going in the next 29 days, the Flower and Garden Festival will still be going on in Epcot. Not sure if you were there for it last time you were in Disney. They have wonderful topiaries of different Disney characters, for the past few years they have been adding food booths with small samplings of different types of food and Friday, Saturday, Sunday and Monday evenings there are concerts in the American Gardens Theatre. There are also some special gardening activities in the Festival Center (open on the Weekends).

While this is not a lesser known thing to do it is great to do if you have not seen Epcot during this time of year.

BoardWalk, BoardWalk, BoardWalk. It's such a "Disney" place, but instead of crazy, bustling crowds, it's perfect to stroll whilst eating an ice cream cone and enjoying the breezes and water. It's a must-visit everytime we're there.
