Lesser known experiences/behind the scenes tours?

Hey all! I'm looking for suggestions of experiences/tours. I've heard of the Keys to the Kingdom tour, but I know there are also tours at Animal Kingdom that I need to try. Or for example, Jiko at AKL does wine tastings on Wednesdays. Do other resorts/restaurants do things like that? Anything fun in the parks I should look into? Bonus points if they're fun for the solo traveler!
 
I thought there was a tour at the wilderness lodge around the resort that's free! I've heard good things about it!
 
I can offer opinions on tours we have done in the past few years.

AK: Wild Africa Trek... SENSATIONAL and worth every expensive penny. Our family of 4 (two teens and 2 adults) did this in November 2015 and loved it.
Caring for Giants....very good. My two kids and I went on the second day it opened and it was awesome. It is only an hour long, but they pack a lot of great information into that time frame.
On my wishlist: Starlight Safari...very limited availablity...happens once a night at 10:00 PM and is open to all, not just resort guests. Which is sort of a bummer...I have been trying to book this for the past 6 months with no luck. :)

EPCOT: Behind the Seeds...very good...we did it twice and had a different experience due to tour guide interaction. We really enjoyed both of them though...just in different ways.
EPCOT Seas Adventure- Aqua Tour...very good. Awesome guide and so much great information available about care, water systems and integration after breeding.

Magic Kingdom: Family Magic Tour...alas this one was a fail for our family. The description indicates it is okay for Teens, Tweens , kids and adults....not for us. My two were the oldest and though the tour guide tried hard, the majority of the participants were under the age of 10.

Hollywood Studios: Considering the Star Wars tour...but I have spoken to CM's who indicate it is not really that much of a big deal considering that much of it could be done on your own with good planning. My two are also too old for Jedi Training, so there is no benefit to us there.

Keys to the Kingdom was fantastic and I'd do it again actually.
Behind the seeds was fun and relatively inexpensive.

Wilderness lodge does have a short resort tour that is free.
AKL has two culinary tours. One at Kidani that focuses on the art in the restaurant - Sanna and one that talks to the flavors of Africa at Boma & Jiko. This one usually includes a few tastes of the menu and starts at 4 pm sharp everyday.
 

Not a tour but I've done the Archery class over at FT Wildness and really enjoyed it... both the class itself and spending time over in the quieter environs at the Ft. Plus I had lunch at Trail's End afterwards, always a treat.
