I noticed that the quiche selections are listed under "sides" and not "entrees" on the menu on the Disney site. Does this mean that I can't use a QS credit with a quiche entree?

I think the quiche would be an entree. Not sure what you'd get here for your Disney Dining Plan side. It is a great place to use your snack credits, much better than an ice cream bar or a bottle of water. Check out the menu here.

I just looked at the official WDW menu. I really doubt they'd offer a quiche or croque monsieur as a side to an entree sandwich. I'm curious to know what happens when you get there. I don't use the dining plan.

You only get your entree, no sides. Now you could also sub a soup for your dessert or drink on the DDP, or anything else that's a snack.
 
The menu on Disney's site is confusing. Use the one from allearsnet referenced above.

For 2016, you would get one entree and two snack items for your QS credit OR you could get three snack items. The snack items must have that little purple logo next to them on the menu. So you can get the quiche as your entree and then add two snacks.

I thought the new dining plan for 2017 is one entree and one non-alcoholic beverage for each QS credit and each day there will be 2 snacks credits.

Well, I am going in 2016, so I get the entree and two snacks; I generally drink only water, very occasionally OJ or lemonade, so the non-alcoholic beverage will turn into an eligible snack for me most of the time. I'm just hoping they'll allow the quiche to be an entree. Their entree menu (on the Disney site) isn't very pregnancy friendly. Unless they'll heat the meat & cheese up for the sandwiches. I can definitely find some good uses for snack credits at Boulangerie Les Halles though!
 
I was able to get a quiche, a drink, and a dessert for my meal in July. They will heat the quiche or any of the sandwiches for you- so yes the meat and cheese can be warmed if you need/want them to be.
