If the WDW trip is your only use for a long lens, you might consider just renting a 70-200 f/2.8 for the week. It'll perform much better than a 70-300 f/5.6, particuarly in the shows and on the safari ride.

I agree with this strategy, f/5.6 just gives away too much in focus speed for outdoors, and too much aperture indoors. Bumping up the ISO may help but reduces image quality. I don't have much trouble with DOF on safaris, but faster shutter speed always helps on that ride.

One compromise if you don't want the bulk and weight of the f/2.8 is Canon's f/4 70-200. It has the sharpness of the bigger lens and only gives up one stop compared to two for the f/5.6.
