Ok guys here is one for you. I have been reading all the budget threads and have really been trying. I have some leftover sausages from sandwiches last week and I don't know what to do with them.

Also some leftover have from a canned ham. The kids are great about leftover clean out the refridge night every Friday but we still have so much and I can't bear to throw it away!

Please help with some great recipes!
 
How about some sausage and peppers on pasta. Or slice it for make your own pizza night.

For the ham maybe some eggs and ham or a quiche.
 
For the sausage, I love to make potatos and sausage. I slice the potatos really thin, slice the sausage into peices, slice a few onions really thin and if you want a bell pepper as well. Sort of saute it in oil and it is so good.

For the ham, you coudl make macaroni and cheese with ham, really good wtih home made mac. Or you could make a potatoe/ham/corn casserole with cheese on top. I make mashed potatoes, mix it wiht a can of cream of mushroom, chopped ham and a drained can of corn. put in a casserole pan and top with cheese.
 

Luckily quiche is super easy. Here's what I use for a base:

--1 can evaporated skim milk
--4-6 eggs, depending on how "eggy" you like it. More eggs will make it firmer.
--a few drops of hot sauce to taste
--salt and pepper to taste
--1 T total of my favorite herbs/spices (garlic, paprika, oregano, etc. Tailor it to what you're adding)

To that "base" I add whatever leftover meat I have, along with about 1 cup each of leftover veggies and shredded cheese. Stir it all together and fill 2 regular pies, 1 deep dish pie, or save some calories and pour it into a well greased 2-quart casserole and make a crustless quiche. Bake at 350 until the center is almost set. This is usually about 35 minutes for 2 regular quiches or almost an hour for the large quiche/casserole. These freeze very well.

Some ideas for what you've got:

Ham/cheddar/diced tart apple - add a touch of nutmeg for a rich flavor
Ham/swiss/chopped spinach - this would be close to a quiche Lorraine
Ham/diced potato/onion - hearty for cold weather
Sausage/bell pepper/mozzarella - a variation on pepper & egg

I don't really use a recipe. I use about 6 eggs, a little milk, salt and pepper (and whatever other spices I am in the mood for) and then mix in whatever I want, could be ham and shredded cheddar, broccoli and swiss, cheddar or mozz. cheese, just whatever. You can use bacon, mushrooms, onions, bell pepper, sausage, etc.
 
one more idea. I usually go to allrecipes.com and do a search. You can type in ingredients adn it will find a recipe using those. That's how I found the ham/pot./corn thing. I had leftovers from some big dinner with ham and mashed potatos, and that's the recipe I found. So you cna do that and type in what you have on hand and it will find recipes for you.
 
If you like pea soup:

(this is an approximate recipe, I don't measure for this)

1lb bag of green split peas
cubed ham
1 can chicken broth
bay leaf
cracked black pepper
small onion, chopped fine
garlic to taste
water (to cover)
potato or two, cubed
Carrot cut into chunks (if you like them)

Pop all the ingredients into a large stockpot. Add water to cover the peas- you want a couple inches or so, since the peas will soak up the water. Bring to a boil, then reduce to simmer, let cook until the peas are tender and falling apart and the soup is thickened. (seems to be about 2-3 hours or so). If too much water boils off before the peas are done, you may need to top it up again, check it every now and then.

Remove bay leaf and serve. This is good with crusty italian bread and a salad.
 
Leftovers in our house are frequently breakfast or lunch. Chop the ham up and add it to scrambled eggs, or slice it thin and make it into ham, egg & cheese sandwiches. Mac and cheese with ham, sliced ham sandwiches for lunch, ham scalloped potatoes, ham fried rice...

sausage scrambled eggs, pasta with sausage/broccoli, sausage sandwich, sausage/potato bake...

Also you can do misc-meat fried rice or misc-meat in sauce on pasta.
 
I second using the sausage with peppers & onions, yum!

I like to use ham in corn cowder, scrambled eggs or omlettes, sandwiches (grilled ham & cheese is yummy). I also like sauteed ham & cabbage. I cook it with salt & pepper to taste and a dash of worchester sauce.

You could also use both of them in fried rice if you also have leftover rice to use. Fried rice is great for using up leftover rice, pieces of veggies and meat. I always make mine with eggs and garlic and usually some type of meat and veggie. Ham, bacon, sausage, spam or any kind of breakfast or leftover meat are good. Onion, bell peppers, mushrooms, celery, peas, corn, carrots, brocolli, basically any non wet veggie are good too. Lightly brown the meat in a bit of oil first, then add veggies and garlic in order of what takes longer to cook. Add a bit more oil and add rice, breaking up any chunks. Finally, push other ingredients to the outer edges of the frying pan leaving the center open. Add a bit more oil and cook scrambled egg in the middle. Once egg is mostly cooked, mix it all together. Season with soy sauce & salt & pepper to taste. If you have it, optional oyster sauce to taste as well.

How about ham and scalloped potatoes? I always rely on my Betty Crocker cookbook if you don't want to purchase the box kind.
 
Sometimes I chop my leftover meat up into smaller pieces, then freeze them for later use. That way my family doesn't say something like "ham again", and it's easy to grab and use quickly!
I also will throw it into a can of soup along with some vegetables and rice for an easy meal (my DH grew up on canned soup-he thinks he is missing something if he doesn't get it :rolleyes:).
