We are having this dish tonight:

Fiesta Taco Casserole

About This Recipe

"This is from my beloved Betty Crocker cookbook, and it is such a favorite that I want to share it with everybody! It's also a GREAT use for those tortilla chip bits at the bottom of the bag! I've "healthed it up" a bit, but you would never guess from the flavor and the servings are huge! The cookbook says this is 345 cals per serving, 13 g fat."
Ingredients

1 lb ground turkey
1 (15 ounce) cans chili beans
1 cup salsa ( the hotter the better!!)
2 cups tortilla chips, broken
1/2 cup fat free sour cream
4 green onions, sliced
1 tomatoes, chopped
1 cup reduced-fat cheddar cheese

Directions

1. Pre-heat oven to 350.
2. Cook turkey over medium heat 8-10 minutes, until no longer pink. Drain if necessary. Stir in beans and salsa and heat to boiling.
3. Place tortilla chips in the bottom of an ungreased 8x8 casserole. Top with turkey/bean mixture. Spread with sour cream, then top with onions, tomatoes, and cheese.
4. Bake uncovered 25 minutes or until hot and bubbly.
5. Enjoy!

ETA- I think this is going to be way more than 4 servings!

I don't really have any turkey recipes, other than sandwiches.

But I am interested in getting a few new recipes for leftover turkey.

I think I'm gonna need it! :lmao:
 
Not exactly a recipe, but I took the flabby day old turkey skin and fried it in a pan with a splash of olive oil. It crisped and browned up and was yummy!
 

I slice up the turkey and freeze in in ziploc bags then I spread out the turkey across a few weeks so my family doesn't get sick of it

Turkey and rice croquettes held together with egg then baked are a bit messy but very yummy, I still haven't perfected how much of what;

I'm saving the turkey broth I used for gravy to make a soup with but I haven't picked one yet. I'm leaning towards Taste of Home's "southwestern turkey soup" because I'm tired of the traditional flavors

I usually find a Rice Croquette recipe and add a bit of small turkey chunks to it. I checked and Taste of Home, one of my favorite go-to sources, and they have one I'll be following. The only change I'll go with will be Minute Rice

My rule of thumb is if I like the individual flavors in a recipe I'll like combo, so far so good:thumbsup2
 
We got sent home with leftovers, but we got TONS of stuffing! Way more than the turkey, potatoes or gravy. Any ideas for leftover stuffing, when you run out of turkey?

I would use it as a pie shell for Turkey Pot Pie. You can smush it into a pie pan and use it as the base and then sprinkle it on top, or just sprinkle it on top. If you have little ramekins then using stuffing to make the whole shell might work out better because it would make individual yummy messes easier to manage.

I would also give it a go as a shell for Chicken Cordon Bleu.

If you really have too much to eat freeze a portion of it and use it like breadcrumbs to top soups over the next month. I bet it would be yummy on top of Potato & Leek soup.

If the stuffing is hard add a bit of chicken broth take spoon fulls then roll into balls, dip in an egg wash then roll in panko bread crumbs, then pan fry in a bit of oil.
