What's everyone doing with their leftover ham?

I'm trying to decide since we have half left over. We are out of eggs amd potatoes so that rules out a few things for tonight.

I need some inspiration. Nothing sounds good from my googling.

Ham sandwich works.

Deviled ham for spread.

Just a basic reheat and serve again also good.
 

Rolling the ham up with cheese into pizza dough like a stromboli then baking and serving sliced alone or with tomato sauce is delicious. Works with just about any meat and cheese you enjoy.

Quiche or frittata is amazing and a great option for lunch all week.

You can dice up the ham and roll it into bisquick biscuits, I used to get these as a treat when I was a kid.
 
If you can’t use it all this week - I’ve diced it up and frozen it in ziploc bags and used it in a quiche or fried rice (or egg roll in a bowl). It defrosts quickly. Even a western omelette (when have eggs on hand). Or ham and bean soup - use the ham bone to make your stock.

My mother-in-law grinds up her leftover ham in her food processor for ham spread - she adds mayo and sweet pickle relish.
 
3 far there have been 3 omelettes made.

We will do fried rice, a carbonara-riff, and some kind of soup, for sure. There is a LOT of ham left, though, so I'm going to have to some thinking, too.
 
My mom used to dice the ham (in good-sized pieces) and put it in a cheese sauce. Chunk up a couple of hard-boiled eggs and add that to the sauce, too. Then serve over home-fried potatoes.

Chunked up ham in baked beans, served with/over corn bread. OR make fancy corn bread using a mix (we like jiffy) and add chunked up ham, diced sauteed red and green peppers, diced sauteed onions, spread it in a baking pan and sprinkle with cheese. Sorry I can't give you specific measurements; my mom was more of a "cook by sight" than by measurement cook!

There's also split pea soup, multiple bean soup, ham/white bean/mixed greens soup. Fold it into scalloped or au gratin potatoes (I do this with the box-mix potatoes).

A favorite (although eclectic) recipe from my childhood was to slowly warm ham in a milk/brown sugar sauce and serve with mashed potatoes. My mom never thickened the milk, but I guess you could do this with a thin white sauce. Yes, I realize it's probably an "acquired taste" but we really like it!
 
I freeze it. I bought a couple of spiral sliced hams for 99 cents a lb. I know it should keep in the refrigerator for weeks, but I just bagged them, froze them, and take out a bag to thaw in the fridge overnight.

I still have a whole 9 lb ham. I also like using the bone for cooking, but there's only for each ham.
 
As if I didn't have enough ham yesterday ....

I bought two more smaller ones for 60% off this afternoon at Aldi. They went straight into the freezer. :)
 
I'll have to swing by Lidl tomorrow--after Christmas, I got a ham for $0.30/lb.

I fry up slices, dice it in fried rice, dice it in au gratin or similar potatoes, use it in omelets or quiche, have it in sandwiches. I find it very versatile, and my gang loves split pea soup.

Of course, DD19 doesn't eat beef or pork--except for split pea soup! So we had turkey yesterday. I just finished turkey vegetable ramen soup for dinner--came out delicious!
 
I made my ham a week early since my daughter was home on spring break and didn't think she would be here on Easter. I froze the rest, then when DD decided to come home for Easter anyway, we just did a repeat Easter dinner with the rest from the freezer. Loved having the ham already cooked and sliced.
 
We never have left over ham. I love it, my wife will eat it but not her favorite food so she buys just enough ham for dinner and no leftovers.
