Leftover Ham from Easter dinner - any recipe suggestions?

We bought a Smithfield ham from Sam's Club for Easter dinner. Its boneless with all meat and no fat. I think its a smoked ham. It was expensive, but you use every inch of it. Anyway, other than ham slices again for dinner, do any of you have a knock-out recipe suggestion for these leftovers?
 
Ham and Cheese enchilidas--- I use canned sauce or packet w/ can of tomato sauce.
Ham Quesadillas

I like to use my meat leftovers in various Southwest inspired dishes. My dh likes casseroles that his folks like to use up their ham.
 
Besides a yummy scalloped potato and ham caserole?

...not a knock out recipe, but it's a tradition we have for dinner the day after. We cut up the hard boiled easter eggs and the leftover ham, add it to a white sauce (butter, flour, and milk thickened) spiced up with salt and pepper and serve it in/over toast cups which are pieces of bread molded into a cup cake pan and baked.
 
I do not know if you want to consider this but I always make ham salad and we love it. Chop the ham (food processor) and add mayo, pickles, onion and etc. to your taste. Smoked ham makes it better...... :teeth:
 

Yesterday I fried slices up and made eggs and ham for breakfast. I would probably make ham salad if I had a substantial amount left over.
 
Good question. I've got alot leftover too. I've already chopped up 4 cups of ham, and froze them into ziploc bags (1 cup each) for future recipes. But I still have alot more. Just got tired of chopping.

I make Homemade Mac and Cheese and cube ham and add it in. Makes a great dinner, leftovers for lunch and also freezes well.

I use the recipe from Art Smith's cookbook (Oprah's chef)
 
I make pasta, usually bow tie pasta. Throw in a good handful of peas with the pasta in the boiling water. Then put the drained pasta and peas in a 9 x 13 pan and add in 2 cups of cubed ham half of a chopped onion and a jar of alfredo sauce. Sprinkle with parmesan cheese and put in a 350 oven for about 15 minutes for the flavors to meld. I serve it with the leftover rolls. It is one of my sons very favorite meals!

I also love split pea soup and make it with some of the leftover ham in the crockpot. This is easy to freeze for a later time as well.
 
Quiche! It is the ultimate godsend for leftovers.

Here's my basic recipe:

6 eggs
1 can evaporated skim milk
1 t. seasoned salt
1/2 t. each black pepper and paprika
2-3 dashes hot sauce to taste (optional)
1 cup shredded cheese (whatever kind you like)
1-3 cups chopped meat and/or vegetables (use up whatever you have lying around!)

Blind bake a deep dish pie shell at 425 for 10 minutes or butter a 2 1/2 quart casserole and preheat oven to 350. Mix eggs, milk, and seasonings in a bowl until well combined. Add chopped meat/veggies. Remove pie shell from oven and reduce temperature to 350. Place shredded cheese in the bottom of pie shell or casserole, reserving a little bit to sprinkle on top. Pour egg mixture over cheese and top with reserved cheese. Bake for approx 35 minutes for a pie shell and about 50 minutes for a casserole. The quiche should be soft-set and a knife inserted 1" from the center should come out clean. Let the quiche stand for 5 minutes to set.
 
I make a pot of lima beans with ham, onion, garlic, salt and pepper. I like it to have a soupy consistancy. I have rice and buttermilk cornbread to go with it.
 
I'd chop some and slice some for the freezer. Then copy these ideas and use them in a week or two when I'm feeling more excited about ham again!
