Leftover Easter Ham


I forgot to add:

I won't be making it, but tomorrow when my Mom comes over, I'm sure she'll bring me a container of ham and pickle salad (ham, sweet relish and mayo) so that we can eat it as sandwiches for lunch tomororw. :banana:
 
Today I am picking up croissants and swiss cheese, making sandwiches and putting them in the freezer. Then I can just toss one in the toaster oven for lunch at a later time. I love hot ham and swiss cheese croissant sandwiches!

One night this week is omelette night (ham of course) and pizza night will be Hawaiian.
 
Pasta with peas and alfredo sauce... It's what we are having for dinner tonight!:thumbsup2

GREAT idea! I'm using this one if you don't mind ;) I have cubed it up and put it in macaroni and cheese too but my kids are going thru a phase where they don't like macaroni and cheese.

Do the sandwiches unfreeze ok? I'd like to maybe try this so I can have a quick lunch that I can grab for work when I have nothing else ready. It will save me from going through a drive thru.

I normally make a ham and cheesy noodle casserole, but I don't think I will have enough left over this time to do that and with DH working at night now, I wouldn't have time to get it made and cooked in time for him to eat before he leaves.

I have also made Chicken Cordon Bleu.

I dice it all up and freeze it for future quick dinner - great for hash, omelettes, scalloped potatoes w/ham, cheesy ham & corn chowder, split pea soup, ham & pineapple pizza - I can usually get at least 5 meals out of the leftovers. It's a great money and time saver!

I have no clue, first time freezing them-lol! I do freeze deli rolls all the time and never have a problem with them defrosting. I guess I will wrap them each in tin foil and put in a freezer bag. My dad gets free hams from work, so my mom cooked two of them and we are a very small family. I need to do something with all this ham! :rotfl:
 
I make this soup, but I add corn and diced carrots. I also use half chicken broth and half water instead of the bouillion and if I have on hand I use some fat free half and half for half of the milk. My husband likes it thick and chowdery.


Ingredients
3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups water
2 tablespoons chicken bouillon granules
1/2 teaspoon salt, or to taste
1 teaspoon ground white or black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk


Directions
1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

Sprinkle with shredded cheese.
 
That soup sounds good. I like to make soups on Sundays. I have been alternating between minestrone, potato soup and corn chowder. I might give your recipe a try!
