Other than just reheating, anything good I can do with three leftover baked sweet potatoes?

Yes, they are what I like to use most for sweet potato casseroles. I slow bake my potatoes until the syrup starts to run out, and they are very sweet then. We love them that way just to eat, so I have to always bake plenty if I want any left over for a casserole. ;) I make a pecan crunch topping instead of marshmallows since we like that better.

Just noticed you said (3) potatoes - uhmm, guess it will depend on their size! I've also sliced them length wise, then fried them in a little butter, then put a little brown sugar on top.
 

Fufu! just like at Boma! gogogle it for many recipe options.

I love sweet potatoes almost any way I can think, except, for some reason I do not like the fufu at Boma. I think it's the amount of coriander that they use. If it's like the recipe, it's 2T. per 1lb. of potatoes - much too strong for me. I prefer to leave it out, add a little nutmeg and cinnamon, a little more brown sugar, and egg. Guess it's no longer fufu now. Should just say I don't care for it. ;)
 
Dice them up and make a hash with onions, sausage (I like chorizo with sweet potatoes), peppers, garlic, salt, and pepper. I also like to make this, and when it's almost done, make a few holes in the hash and drop eggs into them. Then I cover and cook for a few minutes until the eggs are done.
 
IF they are already baked they will be soft, you'll be able to just mash them up with some brown sugar and butter for mashed sweet potatoes, or make a small sweet potato pie with them.
 
Mashed sweet potato, I bake them this just for this reason!

Peel them and throw them into your mixing bowl, I use my kitchen aid.

Add "some" butter, a little can milk, a little brown sugar, a pinch of salt and a dash of cinnamon ( adjust anything to taste). Serve hot! YUMMY.
 
I have a sweet potato pancake recipe I've used them in. Yummy! Basically, it's like a pumpkin pancake.
