Leftover Baked Potatoes

We went to a Halloween party tonight and I took baked potatoes to go with dinner. I have 6 left. What are some good recipes that I can use them in???

You could make twice baked potoates. I don't have a recipe but they are really good - I think you just scoop them out mix the potato with bacon or ham, cheese, & sour cream put it back in the skins and bake again!
 
Savory Leek Soup from Taste of Home has potatoes in it and is very yummy IMHO. To make it healthier I cut the butter down to just enough to saute the leeks and use fat free half & half.
 
You can make gnocchi, Italian potato dumplings. Just press the inside of the potato through a ricer, add an egg, parm cheese and flour. Mix it all up, roll it out like a play dough snake, cut it into one inch pieces and roll it off a fork. My kids love them!
 

My dad used to shape them into patties and fry them up in a pan for breakfast the next morning - they'd get a nice brown top to them, yummm!
 
I second the baked potato soup. Yum.
You can find a good recipe on allrecipes. I'm warning you though.. it's not even a little bit healthy or low fat. It's comfort food that's for sure:rotfl:
 
I just chop them up and fry them, you can also reheat them in the microwave.
 
I slice and fry them up with butter, garlic, rosemary. Sometimes I'll fry them in a bit of bacon fat.
 
I second the fry them. We fry them with sliced hotdogs. My kids (and DH) love fried hotdogs and potatoes.

They are also good as a breakfast - fried potatoes (you can add a little onion) with bacon and eggs.
 
Yummmm, sliced and fried in the bacon grease left in pan from frying bacon...then Fry some over easy eggs...put it all on some toast for the world best breakfast sandwich.

I slice them up add sliced up onions and sliced peppers fry them up together and make home fried potatoes.
