I've heard of people with left over credits "paying" for other guests meals so they weren't lost too.
If you have a lot left, some of those snack credits can amount to a ton of rice crispy treats. ;-)
Between DH, me and my parents we had 20 unused credits at the end of our last trip (Deluxe Dining Plan = mistake). We got some food for the trip home and then used the rest for cookies and rice krispie treats as souvenirs for coworkers.

Which should be an indicator that thee DDP and DDXP are not a good value for many people. I know people like to have everything paid for in advance. I have started buying Disney gift cards through out the year to give me that "already paid for" feeling.
I eat what ever I want without worrying cost or credits. If I want to order 2 appetizers instead of an entree I do, If we want to share a desert instead of getting multiple deserts we do. If I want to eat a soft pretzel for lunch I do.
Then, if there is any money left on the gift cards I put them towards my next trip.
Best part is that I save on these gift cards by buying them at Sam's Club $142 for $150 card, or at Target 5% using my red card.
We did it at Goofy's. We asked if we could pay for 3 of the snacks using a QS credit.
What I'm not sure of is what would have happened had we only bought 2 snacks. I'm assuming we'd end up with one less QS credit and 1 remaining snack credit, but I'm not 100% sure.
At whatever location you choose that sells snacks (you will see the purple ddp logo next to items) you can choose 3 items marked with the purple logo and let the cashier know you want to use a QS credit to pay for them.

All 3 items have to be chosen in one transaction so you cannot pick 2 things at one place and "save" the third choice for elsewhere. You lose that portion of the QS credit because the cashier is using your QS credit to pay for the snacks you have chosen.
Sorry OP, I don't mean to go off topic but I while reading this, I was wondering: Has anyone tried using one QS credit for 3 samples from a F&G or F&W booth?
