Leaving Lurking Behind with a Trip in Plan Again! :)

I posted quite a bit early in the year when planning my first WDW holiday. We went in May and immediately wanted to go back! Since then I posted a small trip report and have lurked pretty much since and my attendance on the site dropped a lot in general - suprise suprise reading Disny without knowledge of going is no fun!
We now have a loose plan for Sep/Oct of this year and I'm planning minute details already!

Here's my vague-ish plan - any initial comments/ideas please let me know! :)

-Me and DH
-3 weeks
-Fly in from Manchester to Montreal or Toronto. Fly home to Manchester from Orlando.
-1 week in Canada (Toronto/Ottawa/Montreal?)
-Fly from Canada to MCO
-2 weeks at Orlando
-1 week car hire?
-(Already booked) CSR resort with 21day park tickets and upgraded from QSDP to DDP

I booked CSR a few months ago thinking we'd do a 3 week split stay so got the 21 day park tickets. Now we only need 14 day so I was going to ask to reduce them but decided we might not now as the price difference isnt too much and we get mini-golf and disneyquest included?:confused3
We also only booked 12 nights for CRS and now need 13. However I thought of staying at AoA for 1 night instead of extending CSR as I'd like a mermaid room and to see what it's like.
We did QSDP last year and are doing DDP this year. There are a lot of restaurants I want to try. I'd like to have dinner at 'Ohana, I think if i get in when my dates come out I should be ok for one of the 13 nights but havent read too much into ADRs and actually how 'hard to get' something really is yet!
Lastly, I'm still learning to drive and expect to take my test in March. My instructor has automatic as well as the manual which I'm learning in- so driving at automatic would be ok. I believe I could hire from some places, where, as I'm over 25 there's no limit on how long you've been driving. I know we wouldnt need a car to get around so I dont mind if we dont end up hiring one but I'll bear it in mind as an option.
