Le Cellier Cheddar Soup-- what kind of beer?

Hi all (sorry if this is the wrong forum for this topic),

I was wondering if any of you had tried to make the cheese soup from Le Cellier. This is the recipe for it that I plan to use: http://allears.net/din/recipes/rec_chsoup.htm

For those of you who have tried it or something similar, what kind of beer would you recommend? We don't drink beer, so I have no idea. Thanks!
 
I've made it about five times! I use Molson Canadian Ale. Just make sure that you follow the directions as written. I once added the items at the end in a different order and the soup came out kind of "curdled". I usually warm it up a little more when it's finished...not to boiling though...cause I like my soups hot.
 
I think if you use any type of ale it comes out okay - it doesn't necessary have to be Canadian. We've never had the cheddar cheese soup at Le Cellier so I don't know if that makes a huge difference, but we really liked it when we made it ourselves! :)
 

Thanks, all! Ale, huh? I will make sure to look for it. Hoping I can buy one bottle at a convenience store rather than a whole pack at a grocery store... :)

Thanks for the advice on the recipe, disneygal55! I sometimes like to tweak things a bit, but I'll follow this recipe exactly. Well, okay, I plan on omitting the celery, but surely no one will miss it. :laughing:

arcticdisneylovers, I didn't think it tasted like beer. I HATE the taste of beer, but I loved the soup. It gives it a little bite, maybe, but the cheese and bacon flavor keeps it from being too strong.
 
The recipe doesn't call for any more cooking on the stove after you add the beer. That's why I "warm" it up a little more after I add all the ingredients. I think it "blends" the beer. Also...because you slice the vegetables (including celery) really fine...once you stir and whisk the soup as you cook, the vegetables add more color than consistency. My DH and I just had this soup at Epcot's Food and Wine festival and I'll tell you the home-made version is pretty darn close!
 
Does the soup have a "beer" taste? I planned to try the soup in Jan but I don't like the taste of beer. :confused3

It's been awhile since I've made it, but I don't remember a "beer" taste. I don't like the taste or smell of beer, but the soup is wonderful!
