Latest ADR seating available?

We are planning to go in September, when MK/DSH are closing around 8 p.m. most nights. Does this affect the times the restaurants close?
Where do I find out what the last seatings available are for restaurants? My thinking is since parks close so early, we might want to book late dinners to maximize time in the parks?

If you call Disney Dining with the specific dates and restaurants you have in mind they will give you the information.

1) Depends upon the restaurant and the park.
2) Typically, the last ADR is 55-min to 30-min before park closure.
