Late night snacks in room

Grocery shopping for Dec trip. With the DVC kitchen we like to have/cook late night snacks back in the room late at night when we return home from parks. Quick and easy - but "different" enough from home that it feels like a higher end snack then simply chips & pretzels. 2 adults - 2 teens (and a toddler that will be in bed.) What ideas can you give me that you've done? We usually go to room and make a snack and bring to pool to eat/swim late night (yes, in December.)

So I did some frozen pizzas, Apps like Eggrolls/Brie in Pastry, Prosciutto/cheese wraps, etc. Can anyone give me any ideas of somewhat simple snacks they've made late night that seemed "fancier" than chips/dips and went over well in the room and wasn't too much trouble/cooking/etc?
 
Our favorite is high end cheeses and fancy cured meats with good crackers or baguette. Set up our own charcuterie.

Key Lime pie. Ice cream with toppings and whipped cream. Decadent chocolate cake (see Publix Decadent Desserts). Eclairs. Kettle corn.
 

Pot stickers, egg rolls, or spring rolls. Our grocery store makes them fresh daily. You can just reheat them at home. Or some of them are available in the freezer section. Good luck finding an open pool at midnight.
 
We like to pick up a nice crudite platter and walk in slow-motion through the villa.
