I think that the only restaurants that charge upon making reservations are dinner shows, such as Hoop- De-Do-Revue, and the Fantasmic Dinner package. These shows and fixed priced meals are priced per person.

CRT charges full price as well as tax and gratuity unless you're on the dining plan. I'm pretty sure that Fantasmic dinner packages are charged that way too, although I'm not 100% sure I seem to remember giving CC info in order to do a hold that I could cancel up to 48 hours in advance. I have a dining package though, so I don't know about other places.
