I've seen on here that people can get great rates right before cruises sail. Are there last minute deals to be had on summer cruises?
We are going to be in FL for a conference in July, and I was thinking we might try to add in a short cruise either before or after. Right now, the prices seem high. I was wondering if I should just book now or wait til it's closer.

The last minute rates are typically only offered on those cruises that DCL deems as not selling well. There's really no way of knowing for sure which cruises those will be. For the most part, summer cruises sell pretty well. That's one reason the prices are high, as the lowest prices are usually when the itinerary is first released, and prices rise as the space onboard fills.

Late August post the 20th may work.
 
If you are definitely set on cruising in July, you have 2 options:
1) book now and pay the current fare
2) wait and watch, hoping a *GT is offered; the standard fare may increase in the meantime and there is no guarantee a special offer will be available

As mentioned, the special offers are intended to fill the ships that aren't selling well. Summer is peak school vacation time and DCL doesn't usually have trouble filling the ships at this time. But there could be offers available -- if offered, specials are likely to appear in May or June, depending on the specific cruise of interest.

Since Paid in Full (PIF) date is 45 days prior to sail date for the Port Canaveral cruises, they are more likely to release the discounted rates after that, if at all. Since you know which dates and cruises will work for you now, as an add on to your trip, just start checking after that 45 day time frame.

Non-holiday cruises embarking or debarking at a US port for 5 nights or fewer have a PIF day of 75 days out.

Take a look at page 79 of this thread that has been tracking discounts for almost two years. Page 79 is from June 2015 and will give you of idea of what you might expect for discounts.

Just because a discount may have been offered last year, doesn't mean it will happen again this year. A few years ago, the discounts seemed to be abundant, even throughout the summer. But, last year, it didn't seem like there were as many.

If you look at Dream cruises in July, there still seems to be good availability. For example, the July 7, 15, 22 and 29 Dream cruises don't appear to have any room categories in GTY status.
 
Disney does not discount nearly as much as other cruise lines. For the others, check out vacationstogo.com for the really excellent deals (several hundred dollars each for a 4 or even 7 day cruise!). As for Disney, look for discounted rates within 45 days of cruising. If they exist, they'll just show up when you look to book a cruise online, or a good TA can watch for you.

Thank you all for your advice. We've always booked onboard, but this is kind of spur of the moment idea. I will keep an eye on the prices as we hit the dates mentioned above,
