When you do the land/sea package, does the park ticket include Disney Quest?

Yes it does.

You get an ultimate park hopper pass (formerlt known as Length os stay passes). It practically lets you everywhere from the day you check in at the hotel to the day you check out of the hotel. It does NOT work on the day you get back from the cruise.
