You might try Roaring Brook Ranch. It's just south of the village on the road that goes to Lake Luzerne. It's off the beaten path just enough to be quiet and relaxing. They have motel type rooms and a lodge with food and entertainment. We stayed there about 15 years ago for a motorcycle rally (Americade) and, at that time, it was nice. The Americade takes place in Lake George every June during the first week and just about every place gets booked up early.
There are a lot of good places to eat both in town and out and a lot to do in the area.
If you're looking for something upscale, which in that area is all relative, try the Sagamore Inn a little north of the village. It's right on the lake and very nice.
In town, there are probably more hotels per square mile than anyplace else in New York State, but you'd need to get some better advice on which are better.
As I recall, there are a few campgrounds, but I believe they are State facilities with minimal amenities. A little south is Lake George RV park and that is among the best in the country. It's about a 20 minute drive from the village.
