Labor Day Weekend - What would your plan be?

I always overthink things. Now that I've made my plans I'm second guessing them. So, what are your thoughts?

Hubby & I only - we are going September 2nd (Sat), 3rd & 4th. Also, we live about 2 hours away, so Food & Wine on Monday isn't really a good idea so that we can both drive. We are staying at YC. No park hoppers.

Must do: Food and Wine at Epcot one of these days. Animal Kingdom - we skipped this last trip and want to go this trip.
Skipping: DHS - we went last trip and it was so torn up that we didn't really enjoy it - we left at 6 pm and went home.

Park ... Saturday ... Sunday ... Monday ... EMH

MK .... 9 - 10 ........ 9 - 9 ..... 9 - 9 ..... none
EP .... 9 - 10 ........ 9 - 9 ..... 9 - 9 ..... none
AK ... *9 - 9:30 ..... 9 - 9 .... *9 - 9 .... *8 - 9 am
HS .... 9 - 9 ........ *9 - 9 ...... 9 - 9 ..... *8 - 9 am (included the hours for EMH consideration)

My initial thought is MK, EP, AK. Note that MNSSHP will be on Friday, so I'm not sure how that affects Saturday at MK. We tend to not go back to our hotel during the day.

Food and wine is going to be crazy on both Saturday and Sunday of that weekend, I would think, so it's really 6 of one, half a dozen the other on that choice. I also think your thinking around MK being busy the day after MNSSHP is probably accurate. So based on that and your other preferences noted, I would do:

Sat - AK (take advantage of the EMH if you are there early enough)
Sun - EP (maybe with the closing time not extended here like on Saturday means it won't be as busy?)
Mon - MK

If we tried to do AK early enough to do EMH, we won't have time to check into YC.

So you think MK will be packed after MNSSHP? Hmmm...
