I am anticipating having a major surgery in the next few weeks and decided to make up a big pot of chicken stock to eat when I'm recovering. Problem is...I am not sure how to freeze it. I do not have any ice cube trays and would like to portion it out in 4-6 oz. portions. Any ideas out there??

Thanks a bunch! IVY :)

You can use any small 4-6 oz size bowls you have to freeze the broth in and then when they are frozen, pop them out and store in a large freezer bag. If you want you can put the frozen broth back in the same bowl to thaw and heat up.

Or freeze it in Zip-Top sandwich bags. They'll hold over a cup, so you could measure 4-6 oz in each one. Carefully squeeze out the air, zip, lie flat to freeze. Then I get them all together into a 1 or 2 gallon freezer bag, just to keep them in the same place. Takes up the least space of all.

And good luck on the surgery!

I have a Foodsaver and use the bags to vacuum seal chicken soup. I pre-freeze the soup in a container, then pop it out and vacuum seal it in a Foodsaver bag. The great plus is that Foodsaver bags can be boiled.. so I take it out of the freezer - no need to defrost, boil to heat, and have no dirty pot.

Caution - to use the bag as a boil in bag just make sure you have a good seal on the bag. JUst carefully follow the directions and you're set to go.

I used to do what Tink575 did, but found it tedious and messy. I had to handle everything twice - once to freeze and once more to seal in the storage bags. Now I just use the Ziplock storage containers. I use the 4 cup size, but you could partially fill the 2 cup size or even freezer jam size (not sure of the ounces on those). I just put the containers in the sink, ladle the soup in, wipe the edges, put the lid on and rinse or wash the exterior.
The upside is, it goes quickly and stacks right away. The downside is, storage is less compact.
Good luck with the surgery.

When we get chinese food, it comes in plastic containers. I store it in there and freeze it.

I have one cup freezer containers I use to freeze one cup portions of soup or beans. They're very old but I'm sure they're still sold.

Ball (the canning company) has freezer jars. I've seen three different sizes in our store. You can find them with other canning supplies. :thumbsup2

I completely agree on the zip-top freezer bags. For those portions, I'd suggest going to the dollar store and getting ice cube trays. The trays are 3/$1 and you'd probably use them for other things if you had them.
