As mom to 3 kids who don't especially care for kid food, I know exactly where you're coming from. However, it really isn't that hard to find decent kids' options at Disney restaurants (at least at table service - we do the deluxe plan and seldom eat quick service so I don't have much experience on that front).
Epcot is really the best for that, because most of the World Showcase restaurants have at least 1-2 ethnic choices in keeping with the "theme" of the restaurant. Rose & Crown has shepherd's pie, fish & chips, and bangers & mash. Tutto Italia has spaghetti and a pasta in cream sauce. San Angel and La Hacienda both have tacos, plus San Angel has quesadillas and La Hacidenda has nachos. Nine Dragons has sweet & sour chicken and beef lo mein. Teppan Edo has hibachi chicken and shrimp. Tokyo Dining has tempura.
At Magic Kingdom, Liberty Tree Tavern has their "Thanksgiving dinner" (as my kids call their turkey entree) on the kids menu and dinner is family-style so the kids can get "adult" food. Tony's has spaghetti & meatballs and ravioli w/alfredo sauce. I don't know about dinner, but at lunch CRT has a kids' portion of their beef pie that my kids really liked. The Plaza doesn't have anything really unique (I miss their kids' chef salad that isn't offered any more!) but the kids' menu mirrors the adult menu with a cheesebuger and turkey sandwich.
Animal Kingdom only really has Yak & Yeti, which has veggie lo mein and egg rolls on the kids menu, plus "chicken bites" that are basically their sweet & sour chicken with the sauce on the side.
DHS is the tough one if you're sticking to one credit choices. 50s Prime Time has meatloaf. Sci-Fi pretty much only has kid-food, though their cheeseburger was pretty good according to DS. Mama Melrose has spaghetti. But the one my kids like best is two credits - Brown Derby has tempura fish, BBQ chicken breast, and a "grown up" grilled cheese (according to my 9yo, who likes grilled cheese but not if it is of the Wonder bread and American cheese variety).
