Do you have any recipes to share that call for ketchup/catsup as an ingredient? I noticed that Zandy595 had added some when tweaking her Pad Thai the other night. I wouldn't have thought to add it & it made me think of the recipe for Bourbon Chicken that I tried.
We used to have a place at the food court in the mall called "Cajun Gourmet" and their Bourbon Chicken was the best...but the place closed & we were all craving it one night so I looked up a recipe & tried it. I was really shocked to see that it called for ketchup. I certainly didn't taste like it had any in it. But we tried it anyway and really liked it. It's not something we have often because it was difficult to replace ALL of the sweet things without killing the taste. I did use unsweetened apple juice & regular ketchup, but only used ½ Tbl of brown sugar & added some Splenda to make it sweet enough - but even then it made my blood sugar go up.
Bourbon Chicken
boneless, skinless chicken breasts
olive oil
1 clove garlic, minced
¼ tsp powdered ginger (use fresh if you have it)
¼ c apple juice
2 or 3 Tbsp brown sugar
2 Tbsp ketchup
1 Tbsp cider vinegar
¼ c soy sauce
½ c water
1 Tbsp cornstarch
¼ c water
Brown chicken in oil, remove from skillet, cover, set aside. Add garlic to same skillet and sauté for one minute. Add apple juice, ginger, sugar, ketchup, vinegar, soy sauce and ½ cup water. Wisk together and bring to a low boil. Add chicken and any juices, stir to coat chicken. In a small bowl mix cornstarch and ¼ cup water together. Add mixture to pan and stir until sauce has thickened. Serve over rice.
Play around with the recipe until it suits your taste. If you like a little heat, add some crushed red pepper flakes.
