Keeping mashed potatoes warm in a crockpot!

Hi,

I read this tip in a cookbook about preparing your mashed potatoes early in the day and keeping them warm in a crockpot till dinnertime.

Has anyone tried this? How well do they keep?

I hate making mashed potatoes at the last minute while preparing a big meal!

I've never done it, but I imagine it would work well as long as you put a little extra milk in them. I'd open the lid every once in a while and stir them and make sure they weren't too dry so that they don't stick to the pot on the sides or get crusty on top.
 
I make mine earlier in the day, and then layer them in a corningware dish with cheese (everyone says ick when I say that, but they LOVE the taters). Anyway... I keep it out on the counter and it stays pretty warm, then zap it in the microwave a few minutes before dinner to give it the hot steam thing when on the table. Works fine.
 
We keep mashed potatoes, candied sweet potatoes and the filling (we always have fried filling, not baked) in crockpots on warm and it works really well, they don't dry out and stay nice and warm. We usually serve buffet style but you could transfer them to a bowl for the table at the last minute.
We do make the potatoes last though, about an hour before the meal. Placing a piece of aluminum foil directly onto the potatoes to "seal" them helps too if you are worried about drying out, just re-fluff before serving.

We do this, and add cream cheese to them to help keep them moist. Yum!
