As PrincessShmoo notes, Palo brunch is offered on sea days. Since this is a 4-night cruise with two stops at CC and one at Nassau you won't really have a sea day so you're out of luck.

Not really sure about this cruise, but we are on a 5-night in July with 2 stops at CC and 1 sea day. Palo brunch is offered on the sea day and on the second CC day.

Yes, I remember reading that some double dips in the past have had the brunch on the second CC day. So maybe OP will be able to snag a reservation.
