Jiko-They went above & beyond

Just had a great experience at Jiko's. Went for dinner today. I was seated at the Cooking Station. When it seemed like I couldn't decide on a choice, one of the chefs gaveme his opinion of which one was his favorites. So I tried the Duck breast. Although I liked the flavors, the way it was cooked (medium-rare) did not sit well with my stomach. When the chef asked and I told him that I should have gotten the chicken instead, he flagged my waiter down. They removed the duck and with in five minutes I had the chicken.
 
Jiko is one of our favorite WDW restaurants - great food, service, and atmosphere.
So glad you enjoyed your chicken.:)
 
1) Actually, they did what any good eatery should do.
2) Duck is hard to prepare.
3) Many (even upscale cooks/chefs) can't do it correctly.
4) Rendering duck fat is very tricky.
. . . done properly, and duck is fantastic
. . . done improperly and it tastes bad, bad, bad
. . . plus, the "resting" phase after cooking is CRITICAL
5) Some eateries consider preparing duck harder than sushi.
6) Glad they sub'd the chicken for you.

NOTE: We have an interest in a fine-dining eatery that serves duck.
No cook/chef can solo prepare the duck without at least 6-months
experience in the restaurant, regardless of duck experience before
coming to the restaurant.
 
Sorry for being OT, but if you love duck, if you ever make it to New York, go to Marc Forgione's restaurant. He's one of the Iron Chefs, and he makes duck like no other place we've tried. Killer. (Well, at least to the duck. Ha!)
