Is there a recommended way to get to the restaurant if we are staying at the Poly but not renting a car?
It's not really fair to compare the three since it's an apples to oranges thing.
Boma is a casual, boisterous buffet with African influences.
Sanaa is casual table service, but has a much more relaxed atmosphere with more Indian inspired food.
Jiko is an upscale siganature with African/European food.
I like them all, but I think Sanaa is the best if you want casual. Jiko is amazing if you want a nicer meal.

Depends on your mood and needs. I love Jiko for the atmosphere, wine, "classiness" (in park attire as classy as I can - hee hee).
Boma has such hustle and bustle, and dang the food is good. Lots to try, friendly folks, etc. Casual.
Sanaa is calmer and quieter, maybe serene. More of an Indian twist on African food. Feels "sweet" and warm in there. Cozy.

Sappermont, From the Poly: Take the monorail to MK, then walk over to the Animal Kingdom Lodge resort bus.
I think Jiko has the highest food quality of these restaurants - it's currently in my top three WDW restaurants. Sanaa serves very tame Indian food (but still good for a 1-credit restaurant) and it has good views of the savanna, while Boma is one of the more unique buffets at WDW. But if I had to pick one, I'd definitely pick Jiko.

Take the monorail from Poly to MK and then take a bus to AKL-Kidani.
