'Jersey Week' is just a week in Nov. when NJ school teachers hold some sort of meeting or meetings, but NOT in WDW. Since school is out for a few days, some NJ families schedule a Disney trip then. IMHO, the crowd issue tied to this and the Soap Weekend is blown way out of proportion. Two or three years ago we went to WDW for 8 days in Nov., the start of which took in Jersey Week, SS Weekend and, for good measure, was the last week of the Epcot Food & Wine Fest. That first Sat., MGM was EE day and SS day. At rope drop there was the smallest crowd we've seen at any drop in any park in any season. We walked on R'n Rollercoaster, ToT and all the other major attractions without FP. The Soap groupies stayed where the 'stars' were and didn't affect the rides. Sun. in MK it got a little crowded around 1 pm but by then the temp was 88 degrees, a record, so we hit the pool at Dolphin. THe rest of the week featured thinning crowds and all in all the 8 days were much less crowded that our usual week, the first in March. I'd go there again that week in a heartbeat with all three of those events taking place.
