We are planning on a trip to CR late Jan. for about 5 days. When should I make the ressie's? If I make them now, and a good package or code comes out, can my ressie be changed to include the discount? Also, is it best to book the room seperate, go with a package or go with the AP's even though we won't be back for another visit?

I would make the reservations now. When you call, ask for CRO an make a room only reservation. Unless you get a really good deal like the FTP, it is usually cheaper to book everything sep. Also by booking through CRO instead of the main reservation line, you get more flexiblity with adding discount codes later when they come out. In addition, with a CRO reservation you do not have to pay the balance until you arrive and can cancel or change ressie up to 5 days before check-in as opposed to 45 days with regular reservations.

Since you are unsure if you will be back, you only need to buy 1 AP. Only one member of the party needs to have the AP to get the discount - should they come available. I am hoping for AP discounts in Jan too as our trip is Jan 10th.
