I've chosen to simplify our trip. Will I regret that? lol

Regarding ADRs , except for the most difficult, in the height of summer, we have always found plenty available on a same day basis. There is far more room for dining spontaneity than you would expect.

We love Animal Kingdom. It is a 2 day park for us. I'd definitely plan for at least part of a day there.
 
The only thing I see is that you aren't taking advantage of some of the great dining options at your resort. Both O'hana breakfast and especially dinner, IMHO, are really fun. You don't say what time you are flying out, but I would actually consider O'hana breakfast on your last day instead of going to CR (if you have an early flight).

:thumbsup2 This! I would consider having breakfast at Ohana instead of Chef Mickey. It'll be easier to get to and will let you enjoy your resort a little longer.
 
When are you going? I find table service to be a welcome reprieve from the weather if you are there when it is insanely hot. September heat kicked our butts. We looked forward to getting way from it. We had 16 ADR's in nine days and welcomed every bit of it.
 
I also agree that I would drop the resort day. For $20.00 pp you can add another day in the parks. Even if you only go to the parks for a half day I think that it is well worth the price. My 5 year old son loves Disney and even though he loves swimming, I can't imagine that we could entertain him from sun up to sun down without going to a park.
