My last visit was in in 2009.
There are a few things that are new that I'm confused about.

Enchanted Tales with Belle - Is this a character meet and great or a show? The description sounds like you go through a pretty interesting queue or is this an attraction in and of itself? If this is a meet and great can I skip that part and just looks at the workshop and cottage?
Explore Maurice’s cottage and workshop—home to mementos and gadgets—before being magically transported to the Beast’s library. Once there, you’ll share moments with Belle, and you may even be invited to play a part in her famous story. Will you be an enchanted object… or perhaps fill the role of the Beast with a heart of gold.

Under the Sea Little Mermaid - I think this is a full on attraction where you ride in shells, correct?

Disney Short Film Festival Pixar -Are these just shorts that we can look up youtube or see on Netflix?

Star Tours - Is this completely new or just an improved version of the old one?

Star Wars Launch Bay and Star Wars Launch Bay Theater- What is the difference between the two?

Star Wars Path of the Jedi - Just a movie? We are only mediocre Star Wars fans. Will it be worth it?

Other than the obvious (7DMT, Frozen, FOP and Na'vi) anything else new in the past 9 years that I am missing?

Yes you are correct about Under the Sea. You ride in shells on a track. It's very similar to Haunted Mansion, style-wise.

I believe the Star Tours is just an improved version of the old one. We did it before and it didn't seem too different for us (but we were last there two years ago).

From Disney's website: Star Wars Launch Bay is a behind-the-scenes video and shows that a new generation of filmmakers is crafting the future of the Star Wars saga. We didn't do the theater, but when we did Star Wars Launch Bay we met Chewbacca and there were a lot of cool artifacts from the movies like light sabers and models of ships.

We've never done Path of the Jedi because it didn't appeal to us.

We only really do rides so I can’t answer most of these. Under the Sea is a ride through the story of The Little Mermaid where you ride in seashells (very much like The Seas With Nemo and Friends at Epcot).
Star Tours is an improved version from before. C3PO is now the one “flying” the ship and it is now 3D and I believe the scenes are different as well.

Since 2009, New Fantasyland opened including Barnstormer (a kids roller coaster basically). The big rides at Epcot received major upgrades. Soarin’ is no longer over various spots in California but now various spots around the world. I highly recommend it, and make sure to sit in row B1 to make sure there’s no distortions and feet aren’t dangling (do not sit in row C3, no matter what. I somehow seem to always get stuck there if I don’t wait for B1 and you have feet dangling, distortions, and you can even see the edge of the screen and the person operating the ride. It’s worth it to wait 5 more minutes to sit in B1.). Test Track is still basically the same idea but it is very different in many ways including you get to design a car and throughout the different “tests”, you get ranked with the others in the car on how you did. The end part is still the exact same. Mission Space Green is now completely different and now you just fly above the earth. Mission Space Orange is still the same but the people in the video just before you go on the ride are all different. As far as rides go, that’s all that I can think of that has changed all that much that you didn’t mention.

While I haven't done it, my understanding is you walk through and then reenact a scene from the movie with SOME of the people who are with you in the building "acting" and the rest watching. You don't get to "meet" Belle unless you are one of the actors.

You MIGHT be able to look these up on YouTube, but you don't want to miss this little gem. They are shown in 4D and it's nothing like what you'll see on your computer.

ETWB is an interactive show. It's sweet to do at least once, IMO. PP have everything else covered. Have fun!

Bring ear plugs if you want to see the Star Wars March of the First Order. It’s deafening.

Of the things you list, we really like the Little Mermaid ride and the Pixar shorts. I haven’t experienced the Enchanted Belle show, but I am told my baby great nieces loved it. :)

Enchanted Tales With Belle - This is a show/meet and greet. You will enter, watch a brief (and cool) into, then everyone will be "cast" as some of the characters. Two adults are picked to be the knights, and the rest of the parts go to kids. There will always be enough parts for all kids, even if they are just a plate or a spoon. The show is narrated by a very cool Lumiere and Belle comes in, does her part, and meets for photos with all of the performers. It's cute.

Under the Sea - This is an "omnimover" style attraction (like Haunted Mansion) that takes you through the scenes from the movie. It's controversial, but I really like it.

Disney/Pixar Short Film Festival - Yes, these are just a few of the animated shorts that they run in front of movies. They can be seen through various home media options. I believe the current selection is Piper, Feast, and Get a Horse and they are presented in 3D.

Star Tours - The Adventures Continue - This is an upgraded version of the classic Star Tours ride that took you to Endor. Now there are several opening, middle, and ending scenes and you get a random combination. They even have scenes from Force Awakens and Last Jedi now. The video is also now in 3D.

Star Wars Launch Bay and Star Wars Launch Bay Theater - Star Wars Launch Bay is a gallery of props and items from the saga and also the home to the Meet and Greets for Chewbacca, Kylo Ren, and BB-8. The Theater shows a short movie about the making of Star Wars, particularly Force Awakens I believe. You can choose watch it or skip it as you enter the Launch Bay.

Star Wars Path of the Jedi - This is like a "supercut" of scenes from all Star Wars media, including the Saga films (through Episode VII) and The Clone Wars and Rebels animated series. It is not particularly special in any way and not presented in chronological order (it kind of goes through themes, like a character, or the Dark Side). This thing is the definition of filler, though it's a tad batter than your average movie preview that they once ran in the space.

Hope that helps.

With all the good (the new rides) lets not leave out the evil. They have removed 2 of my favorite rides The Great Movie Ride and Stitch's Great Escape. I could forgive them for losing one but not both sigh.

I knew about the Great Movie Ride but somehow missed Stitch. I really liked GMR but was indifferent about Stitch. While I have not been since 2009, my children have not been since 2008. They missed GMR. I would have liked them to have seen it although they probably wouldn't have appreciated as much as I do. What is going in instead of Stitch? Did that recently close?
