Jeeeze....we haven't been in a while. we are looking at getting an ap for a visit in early Dec.
We would need to buy pass now and make a park reservation?
Park hopping is a maybe?
Making dining reservation if I don't have a room yet is only open 60 days out?
What else am I missing?

Yes, buy a pass now and make park reservations. If you're not staying on-site, you can only hold a certain number of park reservations at a time depending on which type of AP. (I think most of them are 5?) If you book a room at some point, you can then make reservations for as long as you're on-property.

Park-hopping has only been restricted once since it restarted, and that was to MK yesterday, so assume park-hopping will be fine. Only after 2 though, which is really annoying.

ADRs are 60 days out.

No FP+ to worry about, so...that could be a good thing or a bad thing, depending on your viewpoint?
 
On-site stays don’t count against your AP park reservations limit. Also, if you get an on-site stay, you get the 60+10 ADR window, which is right now, so I’d get that done first for the widest ADR availability. The APs can be done anytime after that. Good luck!
