Considering the crowds, I think you have a lot planned. You don't say if you have children or older ones that might slow you down. You might consider going to early entry parks and when it gets busy going to a different one, but there could be a problem with that stratagy. If the parks get too busy, you may not be able to get entry into them. I understand this happens a lot with MK. I wouldn't go with plan B for that reason.

Your itinerary looks pretty good to me, although you are packing in a lot. My biggest suggestion is to stay flexible. You may not be able to do those rides in the order you have listed. Don't let this bother you. If a particular ride has too long a wait, get a FP and do something else. Similarly, if you are near an attraction that has a short line take advantage of this (sometimes happens during parade times). Last year DW and I were at MGM, heading to Star Tours when we saw the Indiana Jones Stunt Show was about to begin. CM's were waiving people in because there were still seats left. We jumped in to see the show without any wait. We knocked off one attraction without adding a significant amount of time at other attractions.

I'll also suggest trying to squeeze in the Muppet attraction and Millionare at MGM.

Use FP whenever possible. Always hold at least one FP. As soon as you are allowed to get a second FP, get it. This means getting a second FP before using your first FP. This will probably change the order in which you see your attractions but it will cut down the waiting times. It's a must during that week.

One other suggestion: You have a number of PS's for dinner. This is great and you picked some great restaurants. But if you get tied up in a park you may want to cancel the PS and just grab some counter service. You have two meals at Epcot. If you get behind in your touring plan I'd consider skipping one of those meals. Also, on 12/30 you eat dinner at Boma at AKL. But if you finish AK early you may want to hop back to another park for a few hours to catch something you missed. This may be a good time to do that but you would have to cancel your PS at Boma. It all depends on whether your more interested in hitting the attractions you haven't gotten to yet or more interested in trying the great restaurants.

Like I said, the key is to stay flexible. Realize you can't see/do everything (especially that week) and be willing to change your plan as needed.

have fun.
