I think you would be better off not trying to "compare" the two. Even though they are both Disney, they are different types of vacations.
Disney Cruise Line is fantastic at "pampering" so since at WDW you won't be eating with the same servers each night, you will have a better chance at receiving that level of service by visiting places like Artist Point or Yachtsman Steakhouse than you will if you eat at Pizzafari.

DCL you can be as active as you want to be. Spend time lounging at the pool, looking out over your verandah, or playing water sports and exploring another culture. At WDW most people take a very active approach, quickly running from one attraction to another without appreciating the "culture". It's your choice which way you want to go.
EPCOT in particular can provide amazing experiences if you take the time to talk with the cast members about their homelands, great stories!
If you want to feel more pampered at WDW, the All Star resorts aren't the best choice. But if you can afford to concierge you will notice more attention to the details of your vacation. If you don't want to spend money that way, another option is renting points from a DVC owner and experiencing staying in a studio or villla -- now that's living!
When DCL is a full ship, you may or may not notice the crowds. At WDW, you most certainly willl. Crowds, lines, cranky people, it's all part of visiting the parks in peak season. But maybe you'll need to declare some "verandah time" (I believe they call them balconies at the resorts

) and go back and take the time to relax yourself and enjoy that it's a vacation.
If you really can't bear the thought of not being on DCL, maybe add a 3 day cruise onto your vacation!
