According to the airport manager, who is quoted in today's Sentinel, the average TSA wait time at MCO is 26 minutes during peak periods. IME, that's average just about all the time at MCO these days; thanks to the sequester situation.
A lot depends on how you are getting there, etc., whether or not you have a rental car to return, or your own car to park, if you are checking bags or not ... lots of variables.
As to the food, if you are picky, why don't you just bring your own lunch? It is perfectly OK to do so. The only caveat is that soup will not work, and if you choose to bring yogurt, or condiments that you want to add just before eating, then you will have to fit those in your 3-1-1 baggie. (If the condiments are already on the food when you go through security, no problem at all.) Just buy a drink or fill an empty water bottle airside, and you will be good to go.
