Is this too many PS for our trip? Opinions needed..many questions

This will be DDs 1st birthday trip, so I figured we should spend more time relaxing than commando park hopping. Her favorite thing is eating (go figure!), so DH and I wanted to give her the character meal experience. We will take her to Chucky Cheese before the trip, just to make sure she will not be scared of the characters. She smiles, bops up and down, and gets excited when she hears the Disney music, and see's Mickey and Pooh (yes, I have been working on her)! This is our meal schedule (which I guess will determine our park choices):

10/10 Arrival Day- no ressies
10/11 Chef Mickey's Dinner 5 pm (Spectro is 2x this night)
10/12 Cinderella's Royal Table Bkfast 9:55 am
10/13 Rainforest Cafe Dinner 5 pm
10/14 Epcot Storybook Bkfast 9:50 am
10/15 No ressies
10/16 Crystal Palace Lunch 12:35
10/17 Cinderella's Gala Feast 6:10 pm
10/18 Rainforest Cafe 5 pm
10/19 Cinderella's Royal Table 10:20 am

I made the CRT and CP ressies on MK EE day's (DD is ok with just a bottle until PS time), and hope we can get there by rope drop. This way, we can do some rides before bkfast in Fantasyland. Did I leave myself enough time? If we end up oversleeping, or missing the first bus, we can still make it in time to eat, then do some rides. Do you recommend driving on EMH days at MK (especially when you have PS for bkfast)?
I am thinking of cancelling Cinderella's Gala Feast, since I got CRT (twice!), but maybe I'll keep them if the experience is very good and very different. Any thoughts on this? I was going to do CP for bkfast, but I think the $ difference for lunch was 1., so I chose lunch. Is this good? For Fantasmic, I figured on buying some counter service and bring it into the theatre to pass the time waiting. If we end up booking the dinner pkg, it would be HV.
I am planning on getting Connections vouchers for the breakfasts, the RFC lunches, and some Q&C for Pepper Market, Japanese Counter Service, and maybe a few extra. I also have the Entertainment book, and wanted to do Baskervilles one night. Is it necessary to make ressies for that? I have a $25. rest.com gift cert for the Club Car in the Holiday Inn nearby as well. Is this too much or just enough?
Just wanted to add that now DD will get to wear all her costumes-Cindy, Snow White, Belle, Minnie, Pooh, Tink, & multi princesses. Thanks so much!
