Lights Motors Action takes 35 minutes for the show, and probably a solid 10 more minutes to get out of the stadium. There are thousands of people packed in there, and they all have to work their way down just a couple of flights of stairs. The show isn't getting over until 5:05, plus 10 minutes to get out of the stadium, it is already 5:15. Add another 5 minutes to walk (at a brisk pace) over to Indy, and it is 5:20 Indy starts at 5:15, and you need to be in line for that at least 15 minutes ahead of time, since that show does fill up, so to see the 5:15 show you would want to be in line no later than 5:00, so no way are you making that.
Indy is 30 minutes, so the show won't be over until 5:45. By the time you get out of the stadium and walk over to Mama Melrose' you MIGHT make it there at 5:55, but you SHOULD be 20 minutes early for your ADR. Now, truth of the matter is that they will very likely go ahead and seat you, but it will probably be later than you are expecting, more like 6:05 - 6:15 before you are seated.
I always allow an hour and a half for table service meals, and I've never regretted leaving that time in my schedule. Figure on getting back to touring at around 7:30 - 7:45 which makes that first FP+ after dinner very questionable. I think you need to space things out more. Even if you manage to make some of this work, you are going to be in such a time crunch, heaven forbid someone needs to use the bathroom
