Is this enough time?

I just booked breakfast at H&V for 8:10 am. Want to do as much as I can with my 3 kids at HS then plan on hitting Disney Springs in the evening. Is 5:45 pm ADR good for TRex?

Do you think that's enough time at HS?

HS is unique to plan for. Because the shows are scheduled for a few times per day ( and sometimes not every day) , it is difficult to do most of what people want to in less than a full day/ night or two shortened days. That being said, many attractions there are closed right now so it is as easy as it ever was. I would look at what is scheduled while you plan to be there and just enjoy the day. Not knowing the ages of your kids it's hard to advise you whether Rockin Roller coaster is a better choice over Playhouse Jr.

Kids are 7, 5 and almost 2 so def Playhouse Jr over roller coasters.
 
If you want to do Jedi Training, you'll want to get a morning session.
 

there is not a whole lot to do at HS right now so I say yes. We did rope drop on an EMH day, got a morning jedi training, even had a sit down lunch there and were out of there 3ish, in time to freshen up for a 5pm CA Grill adr.
 
Then get your fast passes for TTM and whichever other 2 you choose. Maybe ride GMR as soon as you get out of breakfast. You should have a fun, full day. Are they boys or girls? Beauty and the Beast is probably one of the best shows there right now. Voyage of the Little Mermaid and Playhouse Disney would probably be good choices as well. You won't be able to see everything but HS is a good mix of rides and shows so always feels more relaxing to me.

the older 2 are girls and the boy is almost 2.
