Is there anywhere that keeps track of old Disney cruise dates?

I am thinking about a Panama Canal cruise for the future and I was trying to find the dates that itinerary has been offered in the past (so I can speculate about future cruise dates). I'm not having a lot of luck.

It may not help you. It's my understanding that the Wonder will do the Panama Canal a couple of months earlier than "usual" next year, possibly to do more Mexican Rivieria/Baja cruises prior to her Alaska season.

In the past the westbound trips were made in April & May. The eastbound trips in August, September, October, and once in December.

This is correct - we're booked on next year's WBTA, which is the end of Feb/early March (leaves Feb 24th, 2019). I have a feeling that they'll be playing with itineraries and dates for multiple ships over the next couple of years in preparation for the new ships to launch.
 

Try the Touring Plans Fare Tracker https://touringplans.com/disney-cruise-line/tools/fare-tracker. Once you pick a ship and particular itinerary, it will give you a drop down box showing the various dates it has been offered. I'm not sure how far it goes back, but it does have several years on there. As an added bonus, you can also see how the prices changed over time for a particular cabin type and passenger combination.

The Wonder's first (westbound) Panama canal cruise was a January sailing.
 
The 2013 EBPC was mid Sept. We loved it and are going again this Oct 19.
