Is there a noticeable difference between crowds on a Sunday and Monday in August

We are booking one night in a Universal hotel in August. We thinking Monday 17th Aug so would be in the parks on the Monday and Tuesday. Now thinking of going on 16th August so that we can use our Aquatica/Seaworld tickets for the full two weeks from 18th and have them available on our last full day on 31st. We have a three week trip in total.
Just wondered if there is a noticeable difference between a Sunday and Monday as we have always gone midweek before.

Well..Florida schools go back on Monday, so crowds will likely be a little lower on Monday then on SUnday
 
many school districts in the states start back to school after labor day.
some go back 9/1
