We avoid buffets as well. We've been to a few "non-buffet" character meals:
Cinderella's Royal Table - for dinner, Cinderella is in the Front for photos but she does not go into the dining room, however, the Fairy Godmother and Perla and Suzy makes an appearance during dinner, but technically does not stop at every table. Occasionally, they may stop at your table and you can take a quick photo.
Akershus (my daughter's fav) is good since you will be able to see 5 princesses (1 for photo, 4 circulating in the dining room). Although they do serve a la carte for main course and a family style for dessert, they offer a buffet of appetizers - you don't need to go to it if you don't want any. My children love the smoked salmon and shrimp so we get some. This is the closest thing to a buffet we would go to.
Garden Grill (as someone mentioned) is a family style buffet, so they bring the food to you. They have Mickey, Minnie, Goofy or is it Pluto

, Chip and Dale who come around to your table and spends a good amount of time with you. But we will not be going back since the food was absolutely awful (for us)

, we couldn't eat most of it and ended up still being hungry afterwards. At least we tried it and know not to go again.
As someone else mentioned, there is 'Ohana for breakfast with Lilo and Stitch. They bring the food family style as well. We have not tried this but heard that it was good.
Chef de France had Remy come over to our table during dinner. It was cute. However, I did notice that there were a few tables who had arrived at the same time as us but left before Remy even came out. He doesn't seem to be circulating all the time. We didn't see him anywhere until we were served our dessert and I noticed a few tables who missed him all together. I'm not sure if they keep track of it.
A few years ago, we went to Chef Mickey's, 1900 Park Fare (used to be called something else) and Crystal Palace (yuck!). We just found that we really did not like the buffet foods and the whole concept of buffets (never directly saw some unsavoury scenes, but have heard enough of them to put me off buffets for good.
Personally, if we wanted to see a character, we would eat at our chosen place and then go see them. Since my son is older now and not really into characters, it's just my daughter and she really only wants to see the princesses and Mickey and Minnie. Many times, we saw many princesses around the countries in Epcot and the line ups were not too bad. I think the most we waited was for Tinkerbell and the fairies when the new Pixie Hollow opened.
