You are right. You'll get off at the Boardwalk. You can also walk - but it's a bit of a hike.

Yes you can get to Spoodles from MGM. But I suggest giving yourself some time to get there, even with the boat. They stop at several other hotels before you get to the BW so it might take awhile... usually a half hour to 40 minutes.

Take the international exit, right pass England to the right, at bridge go left. It's a short walk.

Spoodles is at the Boardwalk which is between MGM and EPCOT, there's boats that go between the 2 parks and make stops at the hotels and the Boardwalk which are in between both parks.You can walk the whole way between both parks, but I wouldn't do it unless it's a nice cool day, it's a pretty long way.

The walk from EPCOT to the Boardwalk is not bad at all, however from MGM to the Boardwalk is further, so I suggest you take the boat from MGM to the Boardwalk.

Last March we walked from BWV to MGM. Its a new peaceful walk. I'd recommend it.

From the Poly? That's a project.

1.Bus from Poly to MGM, then boat to Boardwalk
or
2.Monorail to Epcot, walk into and through Epcot to the International Gateway, exit there and walk to the Boardwalk.
or
3. Monorail to MK, then bus to Boardwalk.
or
4. Bus to DTD, then bus to Boardwalk.
or
5. taxi.

Unless you want a boat ride, it's much quicker to walk from MGM to the boardwalk. It took our family about 10 minutes (we are fast walkers). There is a paved path along the canal. The boat ride can be very slow if you include the wait and various stops along the way.
