Is Snow White at the Princess breakfast at Restaurant Akershus?

I know that there is no GUARANTEE which princess' will be at the breakfast, but I was wondering if anyone has had breakfast there recently and has seen Snow White....My DD3 is obsessed with her

Maybe. IF she isn't there, go to the tip board/info center in Future world at Epcot. Ask them to call the Character Hotline and find out when and where in the "world" you can find Snow White. We were able to find her in Germany. My younger dd was over the moon about it. We showed up about 10 minutes before she was due to arrive and she was exactly on time! There was a line of about 10 people behind us but it seemed that it never go much longer than that.

Was there just a month ago, and Snow was one of the featured princesses. In fact, in our three PSB trips in the past 2+ years, she has always been one of the princesses. That being said, there is no guarantee, but I'd say your odds are fairly good.
